An ancestral winery

 

Located in the heart of the Corbières, between the abbeys of Fontfroide and Lagrasse, this area testifies to the riches of the terroir of Boutenac.

Medieval Priory in the 12th century, under the influence of the Abbey of Fontfroide, "the Ollieux" became an agro-pastoral domain during the 18th century. Several large families follow each other, shaping the history and the terroir.

A Family History

Jacqueline and François Bories resumed the estate in 1978. Their son, Pierre Bories joins the family property in 1998, with an ambition: to make sincere and natural wines.

Nature Wine : a challenge

 

In 2003, following an informed discussion with Marcel Lapierre, Pierre Bories experimented his first vinification in "nature" (without sulphites and from native yeast).

 

Experiences...

 

Domaine Pierre Bories, located in the municipality of Fabrezan, becomes its laboratory. He experimented with avant-garde vinification schemes on micro-cuvées, transporting the expression of the terroir and purity.

between two artisans of wine, François de Lignéris (former owner of Château Soutard, Saint Emilion) and Pierre Bories. 

A new challenge

 

On the western slopes of the Pinada massif, Pierre takes the challenge of expressing, from a new domain in the heart of the Corbières, all the variabilities of this terroir.

Over the years, the team was built around a convergent vision of vine and wine. We are now 30 personalities to work together to value our lands and our wines.

We are a proud collective of its territory, which wants to protect and share it.
